Maple sap runs up and down in the trees only in springtime, when days start warming and nights are still cold. Sugaring is an annual spring ritual. Walk through the sugarwoods past the pipelines to the sugar house. See maple syrup made the old-fashioned way, boiled down over a wood fire in an ancient arch.
